【Dr說】宵夜吃粥 可怕喔

想吃飯又不想吃進太多糖份,白米最好不要煮太久。台灣營養基金會執行長吳映蓉說,白米烹調過程中會產生糊化作用,煮愈久糊化愈明顯,會釋出較多糖份,也會使糖份變成小分子的糖,讓人體更易吸收,因此吃粥比吃飯血糖升得快,糖尿病患和減重者都不宜吃太多粥。
 
衛生福利部桃園醫院營養科主任施桂梅指,民眾愛吃粥當宵夜,若搭配足量的蔬菜可平衡血糖值,但以市售鹹粥為例,每碗的蔬菜量大都不到100克,份量太少,睡前吃粥血糖一旦升高,又沒有走路、運動幫助代謝,僅靠體內分泌胰島素降血糖,會增加胰臟負擔,並提高糖尿病風險。(蔡明樺/台北報導)
